You have a couple of options for cauliflower at the grocery store. You can buy a head, which can be relatively expensive and will not last very long. Or, you can find small bags of it in the produce section (sometimes mixed with broccoli), that are often a better value. If you’re buying a fresh head of cauliflower, stay away from those that have gotten brown. Try to find a good, creamy white (or yellow, if the cheddar variety) head, then chop and serve.
